Cap Stock Level outputs to the "Low Stock Threshold" Value in the CMS

The Low Stock Threshold essentially keeps the Stock Values hidden on the website, until they are under that value, so they can't be scraped, monintored or used to see what your best selling products are, however in the customer account section the stock levels that are downloadable, show the actual stock.

I know that it might seem a bit of an edge case, but 100% plenty of competitors and/or customers who go to become your competitors, monitor stock levels to see what sells, so having this feature would block that from happening.

There are two fixes to my mind.

Fix 1

Set the stock level shown to the "Low Stock Threshold" or the Actual Stock QTY, whichever is the lowest.

Fix2

Have a MAX STOCK feature, which in inself is a good feature to have - scarcity is a good call to purchase. - for instance every eBay management program on the market has the facility to set the max stock level per sku, so you can constantly set it to show only one left.

The logic would be, if you have 100,000 in stock because you got them on a deal, you could set it to show you have 100 in stock, until such time as you had <100 in stock.
